Avial / Aviyal


Since its my post I thought of putting a common recipe from my kitchen. This is one such dish, which is simple, healthy and yet tasty. The recipe which is posted below is the common one which I prepare on every other day. On special occasions like onam, vishu or birthdays I prepare slightly different version. I prepared this one with three vegetables. Almost all vegetables can be used.The vegetables should be cut uniformly, length wise ½ “wide. I used pressure cooker to cook this one. This serves two.


Here is the recipe

  1.  Cucumber ( Vellarikka)- ½ cup
  2. Elephant Yam ( Chena)- ½ cup
  3. Snakeguard ( Padavalanga)- ½ cup
  4. Green chillies – 2-3
  5. Coconut grated – ¾ cup
  6. Turmeric powder – 1 ½ tsp
  7. Shallots(chuvannulli/Kunjulli)  – 3
  8. Cumin – 1 tsp
  9. Tamarind juice – 1 tbsp
  10. Curry leaves- as required
  11. Salt – to taste
  12. Coconut oil – 2 tsp




















      




How to cook

Put all the uniformly cut vegetables, 1 tsp turmeric, salt, tamarind juice in the pressure cooker and wait for 2 to 3 whistles. If you are cooking in a pan, add a little a quantity of water  and close it with a lid. Grind coconut, remaining turmeric powder, cumin and shallots to a coarse paste without adding water. When the vegetables are cooked, remove the lid and allow the excess water to evaporate until the curry becomes semi dry.

























Then,add the coconut paste to it and mix it, without mashing the vegetables. Let it sit for 1-2 mins. Remove the vessel from the flame and add coconut oil and curry leaves and close it with a lid. Serve with rice.
