Ammini Kozhukattai Recipe



There are so many variations of Ammini Kozhukattai/Mani Kozhukattai and
this is my version.

Ingredients ( Serves 2)

1. Rice Flour - 1 cup
2. Salt - to taste
3.Water - 1 1/4 to 1 1/2 cup
4. Grated Coconut - 3 tbsp.

To Temper

1. Oil - 2 tsp
2. Mustard seeds - 1 tsp
3. Urad dal - 1tsp
4. Red chilli ( Whole) - 1 or 2
5. Curry Leaves - 1 Sprig

Method

1.Heat water in a pan/kadai(medium flame) and add salt and then add rice flour slowly and mix it thoroughly without out any lumps. I used Idiyappam floor.
2. Stir it continuously, until it becomes a paste and  starts to separate from the sides of the vessel. Switch off the flame.
3. Let it cool down a bit. Once you are able to handle the heat, grease your hand with a little oil and make small rice balls.
4. Once the balls are done, steam them for 10 minutes in Idly cooker.
5. Heat the kadai and temper with items given under 'to temper' list.
6. Now add steamed Mini kozhukattais and stir well.
7.Add grated coconut and mix well.

Now it is ready to serve.
