Edichakka Thoran/ Tender Jackfruit Thoran

Today's recipe is Idichakka/Tender Jackfruit Thoran.



You need
  • Tender Jackfruit - 250 gm
  • Oil - 1 tbsp.
  • Mustard - 1 tsp
  • Curry leaves - 1 sprig
  • Whole Red Chilly - 2
To grind
  • Coconut shredded - 1 cup
  • Cumin seeds - 1 tsp
  • Garlic (small) - 2
  • Turmeric Powder - 1/2 tsp
  • Green chilli - 2 (medium)

Method
  1. Remove the skin of the tender jackfruit and cut it into small pieces.
  2. Cook these pieces with turmeric and salt in water. Once done drain excess water if any.
  3. Pulse it in a food processor (Do not make it paste).
  4. Combine Coconut, cumin seeds, garlic. green chilli and turmeric powder and grind it coarsely.
  5. Heat a pan and add oil.
  6. Add mustard seeds, when it splutter add curry leaves and rec chillies. Then add Shredded jackfruit and sauté it for a minute.
  7. Then add coconut mixture and salt if required and sauté it for a couple of minutes. Finally add one tsp of coconut oil and fresh curry leaves and remove from heat.

Serve hot with steamed rice.
