Today's recipe is Idichakka/Tender Jackfruit Thoran.
You need
- Tender Jackfruit - 250 gm
- Oil - 1 tbsp.
- Mustard - 1 tsp
- Curry leaves - 1 sprig
To grind
- Coconut shredded - 1 cup
- Cumin seeds - 1 tsp
- Garlic (small) - 2
- Turmeric Powder - 1/2 tsp
- Green chilli - 2 (medium)
Method
- Remove the skin of the tender jackfruit and cut it into small pieces.
- Cook these pieces with turmeric and salt in water. Once done drain excess water if any.
- Pulse it in a food processor (Do not make it paste).
- Combine Coconut, cumin seeds, garlic. green chilli and turmeric powder and grind it coarsely.
- Heat a pan and add oil.
- Add mustard seeds, when it splutter add curry leaves and rec chillies. Then add Shredded jackfruit and sauté it for a minute.
- Then add coconut mixture and salt if required and sauté it for a couple of minutes. Finally add one tsp of coconut oil and fresh curry leaves and remove from heat.
